National Chocolate Cake Day

What I love about bundt cakes is that if you’re careful with where the icing goes, you can just cut a slice and carry it on your way. Portable cake! Plus bundt cakes always remind me of My Big Fat Greek Wedding. It’s too bad I didn’t have a plant to put in the middle of mine.

Instead of making any old chocolate cake, I baked a chocolate zucchini cake. You can’t taste the zucchini but can still tell yourself it’s almost healthy since you’re eating a vegetable. I even had a slice for breakfast 🙂 Strawberry icing worked really well since it lightened up the chocolate and I personally don’t like a choco overload. I made sure to drizzle it on to get a pretty picture, but there just wasn’t enough icing for me so I slathered on a little extra. The bundt doesn’t look as nice, but it definitely tastes better!

Tips from Experience-ish: The most nerve-wracking part of  baking a cake is probably getting it out of the pan. I suggest greasing the inside with butter or cooking spray, sprinkling with flour, and tapping out the excess. Otherwise you might have pieces instead of a whole beautiful cake, and no one wants that!

Chocolate Zucchini Cake

  • 1/2 cup unsalted butter
  • 1/2 cup vegetable oil
  • 1 3/4 cup granulated sugar
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 1/2 cup sour cream
  • 2 1/2 cups all-purpose flour
  • 12 oz semi-sweet chocolate chips
  • 2 1/2 cups shredded zucchini


  1. Preheat the oven to 325 degrees. Grease and flour your bundt pan.

  2. In a large bowl, cream together the butter, oil, sugar, vanilla, baking soda, baking powder, and salt. Add in the eggs.

  3. Stir in the sour cream alternately with the flour. Melt the chocolate chips in the microwave at 30-second intervals, stirring after each interval. When fully melted, mix into the batter.

  4. Fold in the shredded zucchini.

  5. Add the batter into the prepared pan and bake for 60 minutes or until a wooden toothpick inserted comes out clean.

  6. Allow to cool slightly then remove from pan. Place on a wire rack to cool completely.

  7. Add some icing if it strikes your fancy!
