Slow Cooker Black-Eyed Pea Soup

Everyone has their superstitions about what will bring luck in the new year. I’m not a very superstitious person, but even I have a few things that I do. Wouldn’t hurt to try to stack the deck for next year! While some people prefer lucky actions, like my grandma who put money under the doormat to make us wealthy in the new year. If I’m going to do something for luck, I’ll eat the foods that are considered to bring it. One of those foods are black-eyed peas, which are supposed to make you more fortunate with money if you eat them before midnight. It’s also convenient that this recipe is made in a slow cooker and can use any meat you have on hand.

Slow Cooker Black-Eyed Peas Soup

Ingredients

  • 2 12-oz cans black-eyed peas
  • 1 32-oz box chicken broth
  • 1 14-oz can petite diced tomatoes
  • 2 cups ham or any other thick-cut meat diced
  • 1/2 cup sweet onion diced
  • 1 garlic clove minced
  • 1 tsp oregano
  • 1/4 tsp black pepper

Instructions

  1. Add the black-eyed peas, chicken broth, tomatoes, ham, onion, garlic, oregano and black pepper to the slow cooker. Stir a little until mixed.

  2. Cover and cook on low for 10 hours. Do NOT lift the lid while cooking.

  3. Add salt to taste and enjoy!

Recipe Notes

Use a 6-quart or larger slow cooker.
