If there’s any time during the year for a party, New Year’s Eve is the time. Some people like punch bowl mixes, dressed up sangrias, or a slightly fancier Jell-O shot. This recipe is of the last variety. I’m not a particularly big fan of shots of any kind, but I won’t get in the way of anyone else’s fun!
Strawberry Margarita Jell-O Shots
- 3/4 cup water boiling
- 1 package strawberry Jell-O mix
- 24-30 strawberries
- 1 cup tequila
- 3/4 cup cointreau
- granulated sugar
- 1 lime
Cut the tops off your strawberries, making sure to cut straight across. Also, cut off a little of the end to help it stand up. Dry them slightly with a paper towel to help the Jell-O stick. Place on top of a baking sheet to make carrying easier.
Add the boiling water to the Jell-o mix and stir for about 2 minutes to thoroughly dissolve.
Mix together the tequila and cointreau, then pour into the Jell-o mix before it starts to harden.
Pour the Jell-O shot mix into the strawberries, then move them to the refrigerator. Leave there to chill for at least 4 hours or until the Jell-O has solidified.
Grate the lime and mix the peel with sugar. Roll the edges of the wide part of the strawberries in the sugar mixture.
