Sweet Potato & Kale Scramble

Today is the second day of my Whole30 program.Yesterday was a bit of a struggle since I hadn’t gone grocery shopping yet. I was hungry basically all day and surviving on salami slices and green grapes. But now I have shopped and am prepared to make some really great recipes! This morning I was determined to enjoy my meal. A few of you might notice that I’m going a little sweet potato crazy in the next few days. This first recipe is the beginning of that, but if you don’t like sweet potatoes, you can always replace them with regular potatoes.

Sweet Potato & Kale Scramble

Prep Time 10 minutes
Cook Time 5 minutes
Total Time 15 minutes
Servings 2 servings


  • 1/2 sweet potato diced
  • 3 kale leaves cut in pieces
  • 2 eggs
  • 3 tbsp olive oil
  • salt


  1. Add the sweet potato chunks to a pan after the olive oil. Cook until they start to soften then add the kale.

  2. Sprinkle with a little salt while the kale wilts and the sweet potato softens more.

  3. When both have reached the point where all the sweet potato and kale has softened, add the two eggs in and move them around with a spatula to scramble. Continue until fully cooked.

  4. Enjoy!

Recipe Notes

Make sure the pieces of the diced sweet potato are all close to the same size so they cook evenly.
